Can I Make mini-Chicken Tacos?
Updated: Nov 22, 2019
I saw this on Hungry Cat's YouTube channel and it looked fun and easy to make, so I thought I would give it a try.
Monday, November 18, 2019, Attempt #1:
I used some rotisserie chicken (shredded by hand), taco seasoning, some tomato sauce, a tortilla and a cookie cutter. I showed the huge Old El Paso dinner kit, but I only used the taco seasoning from it for this recipe.
I cut the tortillas using the circle cutter to make the mini-chicken tacos. I was able to get 3 out of this big tortilla.
Then I placed them on the muffin pan upside down as in the video so that they could toast and mold into shape. I put them in the 350 degree oven for ~5 min.
Meanwhile, I mixed the rotisserie chicken with taco seasoning and a little tomato sauce.
RESULT: Success! :)
We are good at this! How cute do the mini chicken tacos look?
I liked the trick of putting the tortillas on the bottom of the muffin pan because they stay in the taco shape. I also like that he added tomato sauce to the mixture. I wouldn't have done that and it added good flavor to the chicken mixture.
I like to eat mini-foods and appetizers. They are cute, but also I find that you trick your mind into thinking you ate more. I ate 3 mini-tacos, which was only 2/3 or 3/4 of this tortilla and felt satisfied because it felt like I ate 3 tacos vs. if I had eaten 1 big taco.
It was good, fast and easy to make. Give it a try! We are good at this!
