Can I Make Keto "Parmesan Cauliflower Bites"?

This was recommended to me on Pinterest from dinnermom. It looked good -- only had 5 ingredients! -- and it almost looked not like vegetables, so I decided to try it. Haha. :)


Attempt #1:

What I used:

- 1/2 or 1/3 container pre-cut cauliflower florets

- shredded parmesan (grated parmesan works better)

- butter

- paprika

- pepper

I cut some of the bigger cauliflower florets into smaller pieces so the largest size ones were ~1-2 inches big.

First, I put the butter into the container and melted it in the microwave with the cauliflower for 30 seconds. Then I shook it around.

Then I put the cauliflower w/ melted butter in a plastic bag with the cheese, paprika, and pepper and shook it around. This saved me a few dishes for the dishwasher.

Then I put it in the Air Fryer on Oven setting at 425 degrees for 12-15 minutes.

RESULT: Success / Fail.

We are good at this. / We are good at this? I may have left them in a few minutes too long, but they didn't taste burnt. They were crispy and tasted really good. :)

It's a really easy recipe that barely has any calories. A cup of cauliflower has only ~27 calories. Also, this a keto friendly recipe -- only cauliflower, cheese and spices.

I have noticed that the temperature settings & times for the Airfryer/Oven are slightly different than what I would use for the oven. I noticed should decrease the temps and times for the recipes when I put them in the Air Fryer/Oven (vs. oven). Next time, I will do that.

I do recommend that you use finely grated parmesan in this recipe as it will coat the cauliflower better. Similar to as I mentioned in "Parmesan Chipotle Popcorn" post, finely grated parmesan makes a better coating.

Attempt #2:

This time I had a whole container of pre-cut cauliflower, so I made it in the oven because it wouldn't fit in the Air Fryer/Oven. I used the same trick of mixing the ingredients in a plastic bag. I still only had shredded parmesan.

I cooked it at 375 degrees for ~25 min. (oops, forgot the recipe said 425 degrees :) ).

RESULT: Success.

We are good at this. They tasted good. If I had remembered 425 degrees maybe they would have been crispier, but they were still crispy.
