Can I Make Keto/Low-Carb "Chicken, Bacon & Leek Casserole"?

I was looking for Irish food for St. Patrick's Day that was not the usual suspects. I saw this recipe on Pinterest from Noshing with the Nolands that looked really good -- not just for St. Patrick's Day, but for any day --so I decided to give it a try!
It has leeks, which I have recently found I like a lot. They have a sort of mild onion flavor. I probably wouldn't have tried them if I hadn't seen this recipe while I was at the DMV for Cauliflower & Leek Casserole. Haha! :)
I just made a smaller version than in the recipe. Their recipe calls for 3 lb. of chicken; I just used about 8 oz. of chicken breast. I also didn't have half & half (which is in their recipe). I just used a little cream cheese and milk for creaminess.
What I used:
- Chicken breast
- Bacon (a couple slices)
- Cream cheese (~1 tablespoon)
- Milk (~1/4 to 1/2 cup)
- Tarragon (1 tsp)
I cut the bacon into about 1" pieces and then I sauteed it with the chopped leeks. Then I took them out of the pan & placed them aside.
In the same pan, I added a tiny bit more oil to the bacon fat, and I seared the chicken breast on both sides. I also added the milk, cream cheese, and tarragon.
Then I put a the bacon & leeks back in and covered it with a pan lid and left it on the stove on low-medium/medium for ~15-20 min to make sure that the chicken was cooked through.
That it's it!
RESULT: Success! :)
We are good at this! It was really good. I've actually made it a couple times already. I didn't realize how much I like tarragon flavor. It's also low-carb if you are on a low-carb diet.
It's a pretty easy one-pan recipe that looks pretty fancy. As I mentioned, it's good for any day, not just St. Patrick's Day. :)
