Can I Make Keto/Low-Carb "Cheesy Buffalo Chicken Casserole"?

Sometimes it's hard to think of what to make for lunch or dinner even if you have food in your fridge. I saw this on Pinterest from margotcarmichael.com and it answered my question: what should I make for dinner? Similar to what I wrote above, she writes, "This recipe is the perfect answer to all of your “What should I do with this chicken breast?” questions."

Attempt #1:
I made a mini-version of the recipe. She also uses cilantro, but there is a recommendation that you can use green onions. I had green onions, so I used green onions.

What I used:
- Shredded chicken breast
(This is about ~6 oz.)
- Cooked Bacon (2 pieces)
(You could use fully-cooked bacon in this recipe.)
- Buffalo sauce
- Cheddar
- Green onions
Tip: I bake a few chicken breasts at once to save time and use them in different recipes. This works for recipes that I try with shredded chicken. You can also use rotisserie chicken for these recipes as I have mentioned. For some recipes, this doesn't work and I need to start with raw chicken breasts. When I do plan to cook recipes with shredded chicken, then I can bake a bunch of chicken breasts once. I bake them at 400 degrees for 15-20 min. -- depending on how big the chicken breasts are.
She browns the chicken in the pan before putting them in the oven. I already had cooked chicken breast, so I didn't do this.
I shredded the chicken. Then, I added the buffalo sauce, cheese, bacon, and green onions to shredded chicken. Then I baked it at 375F for about 20 minutes.
RESULT: Success! :)
