Can I Make "Healthy One-Skillet Shrimp and Quinoa"?
This Shrimp & Tomato Quinoa recipe on the Food Network caught my eye and I decided to make a version! I had some quinoa and was looking for something to do with it. :)
What I used:
- Frozen shrimp (thawed)
- Charred tomatoes (I had batch prepped & thawed)
- Roland Sun Dried Tomato Quinoa
Now that I am looking at it again. I overlooked that the recipe has Cajun spice & garlic powder & other stuff in it in it. I forgot. Haha! :)
I guess I was cooking off the photo. Haha! :)
Anyways, I just cooked the quinoa according to the package; adding water. I cooked the quinoa and then I added in the shrimp at the end (they cook in ~3-5 min.). Then I added in the tomatoes (which I had cooked previously). I prefer tomatoes cooked rather than raw; personal preference. :)
RESULT: Success! :)
We are good at this! It was really good and something I wouldn't have thought of. It's also a different meal to mix things up and it's easy. And as the title says it's healthy! It probably would taste even better with all the spices, haha! :)
