Can I Make "Fresh Spinach, Tomato and Mozzarella Pasta Salad"?

I love a good pasta salad and this one on Pinterest from citrusanddelicious.com looked tasty and easy.



It's Fresh Spinach Day!


I'm also a big fan of frozen spinach as I wrote about before and frozen food has a very interesting history. Check it out!


I made a smaller batch for myself.

What I used:

- Fresh Spinach

- Cherry Tomatoes

- String cheese mozzarella (I forgot to buy fresh mozzarella)

- Fusilli

I did about 1/3 or 1/2 of the full ingredients for the vinaigrette (1/3 or 1/4 of this)

- ¼ cup olive oil

- ¼ cup white vinegar

- 1.5 tsp garlic powder

- 1.5 tsp salt

- 3/4 tsp ground black pepper

- 1 tsp Italian seasoning

One thing I did differently was that I did saute the spinach and tomatoes a little bit -- personal preference.

Then I made the vinaigrette.

Then I mixed it all together. I put it in the fridge to eat as a cold pasta salad. Yum!

RESULT: Success! :)
