Can I Make "Diet Coke Brownies (Low-Cal Brownies)"?

When I saw this Tasty video on brownie mi hacks on YouTube using just Diet Coke with brownie mix, I had to try it! I love Diet Coke anyways, but if it tasted good, then it has NO additional calories outside of the powder brownie mix!

What I used:

Ghiradelli Brownie Mix (1/3 or 1/2)

Diet Coke (1/2 or 1/3)

In the video, she just uses 1 whole box of brownie mix and 1 whole can of soda. It doesn't have to be Diet Coke or diet soda; any flavor soda.

I was only making a small batch for myself. So I initially planned to use only 1/3 box mix and 1/3 Diet coke.

I accidentally poured more like 1/2 soda into the 1/3 brownie mix in the bowl. It was a little watery looking (Photo 2), so I added some more brownie mix in until it looked like normal brownie batter before baking (Photos 3 & 4).

That's a tip I do all the time -- making adjustments on the fly. I add a little flour/batter or water as needed to correct the batter or dough before baking.

I put it in a parchment paper lined baking pan.

Tip: This is a tip she says in the video too. These brownies will stick to your pan, so make sure it's covered with parchment paper.

Then I put them in a 325 degree oven (as on the package) and crossed my fingers! Haha! :)

RESULT: Success! :)

We are good at this! The brownies looked like brownies! They are really good too! I was surprised! I slightly lighter tasting than normal brownies -- BUT still fudgie! You might even like the taste of it better. The top looks slightly different and you can kind of see the carbonation. If it bothers you, then you can dust them with powdered sugar or add a topping to them.

If you use Diet Soda, then there are NO additional calories outside of the brownie mix. Honestly, I don't think flavored soda matters because I think the chocolate-y-ness of the brownie mix overpowers the soda. However, Coke/Pepsi works well because the cola / slight caramel-y taste of them goes well with chocolate anyways. But like I said, I don't think the flavor of the soda matters.
