Can I Make "Cheesy Spinach Bacon Dip"?
Updated: Jan 18, 2020

I wrote about this Cheesy Spinach Bacon in both the #tttfn Christmas and #tttfn NYE posts. So I guess you know the answer, haha. :) I can make it. It's a good snack/appetizer for those New Year's resolutions because I think it's keto/no-carb.
I made a few tweaks: to make it faster (by using the microwave) and to make it keto/no-carb by serving it with frico (parmesan crisps), which I wrote about before.

Attempt #1:
In the Tasty video, you cook some things on the stove and then put it in the oven. I just put some things in a bowl and used the microwave. Another difference is that I made a smaller portion.
The ingredients in the Tasty video are: garlic, scallions, 16 oz. frozen spinach, bacon, and 2 cups of mozzarella cheese, salt & pepper. I didn't use garlic or scallions and I used a lot less of spinach, bacon and cheese. In this recipe I think it would be fine to Oscar Mayer fully cooked bacon or bacon bits if you want.

What I used:
- Frozen spinach (microwaved & dried out with paper towels)
- 2 pieces of bacon (crumbled)
- 1- 1.5 oz. of mozzarella (I only used 1 of 2 in this picture or maybe I used 1 1/2)
- Shredded parmesan for the frico
(That was made on the stove in 30-60 sec.; see post.)

This is not shown in the photos. But first, I microwaved the spinach separately for 60-90 sec. and then I pat it dry with paper towels. I didn't want the dip to be watery.
Then I added the crumbled bacon and mozzarella to the bowl and microwaved it for 30 sec. I only microwaved it long enough to melt the cheese, but I didn't want to burn it.
Then I just mixed it all together.
RESULT: Success! :)
We are good at this! It's really good and takes 2-3 minutes to make. You could serve it with crackers or chips, but the parmesan crisp make it keto/no-carb. :) The frico only take a few minutes to make a bunch, so really it all would take ~7 minutes. Yum! And healthy too!
It's become one of my fav appetizers/snacks!
Give it a try! We are good at this!
