Can I Make [Cheesy] Pork & Mushroom Casserole?

This Pork & Mushroom Casserole on from Iowa Pork Producer's Association (@iowapork) on Pinterest looked good and I wanted to try it! I made a couple adjustments like adding more cheese! and also the recipe calls for Cream of Mushroom soup, but I didn't have any, so I made some vegan cream of mushroom soup that I came up with (link below). Also like other recipes, I just made a smaller portion for myself.
What I used:
- Pork Chop (only half of this one)
- Uncle Ben's Wild Rice
- Cheddar Cheese
- American cheese (not shown; I added it in later for more cheesiness, haha! :) )
- Mushrooms, corn starch, almond milk for the cream of mushroom soup part
- Spinach flakes for flavor and color
My pork chop was really thick and I like to have a crust on the outside, so I seared the pork chop for a few minutes on each side before putting it in the oven. I also made the mushroom soup and the rice. I added the mushroom soup on top of the pork.
Then I added on the cheddar cheese and I put it in the oven. Once the cheddar melted, it was cheesy, but I wanted more cheesiness, so I added some American cheese on top and put it back in the oven for a few more minutes.
RESULT: Success! :)
We are good at this! It was really good! I wouldn't have thought to put pork with cheesiness, mushrooms and rice all together in a dish!
