Can I Make "Bruschetta with Hot [Cold] Cherry Tomatoes"?
Updated: Aug 24, 2020

I actually made a cold version of Hot Cherry Tomatoes from Rachel Ray on the Food Network (link). Haha, I realize cold is the opposite of hot. I already had some charred cherry tomatoes in the fridge. I liked the recipe because it sounded good and I wouldn't have thought to put the spices together. :)

For the bruschetta, I made some fresh bread: No-Knead Artisan bread from olgainthekitchen.com. Check out that post:

What I used:
- Cherry tomatoes (already charred)
- Garlic powder
- Chili flakes
- Fresh Basil (from my own urban garden!)

In the original version, you sautee and soften garlic because it is a hot spread. Because I was doing a cold version, I used garlic powder so there wouldn't be chunks of raw garden. I just mixed it all together. It was super fast!

RESULT: Success! :)
We are good at this! The cold version is actually a refreshing snack or appetizer on a summer day or anytime. It's a tasty way to use up leftover cherry tomatoes you might have too.
Give it a try! We are good at this!
