Can I Make "Blueberry-Lemon Breakfast Biscuits"?
Updated: Aug 25, 2020
This recipe I saw on Flipboard from allrecipes.com looked tasty and only used 4 ingredients!
Happy National Blueberry Day and actually it is also National Blueberry Month!
- Pillsbury Biscuits
- Lemon (zest - which I didn't have and lemon juice)
- Powdered sugar
I only had 1 lemon. There is a picture of a "True Lemon" powder in here. I was going to use it if I wanted to amp up lemon flavor. I didn't end up using it.
I actually had zested the outside of this lemon for something else. It looks a little naked, huh? Haha! :)
I only made 1 biscuit for myself. In the recipe, it says to cut it in half cross-wise (to make them thinner) and then add blueberries. There are 2 halves shown here, but it's 1 biscuit.
Instead of baking at 350 degrees, I baked at 325 degrees. On the package, it said you can get taller biscuits by baking a little longer at the slightly lower temp.
While the biscuit was in the oven, I made the glaze -- by mixing lemon juice and powdered sugar.
Then I put them together!
We are good at this. I gave myself a period instead of a full exclamation point ! because I could have probably added a lot more powdered sugar in there to thicken up the glaze, but it tasted good to me being a little more tart.
It's really good and easy to make! It's a little sweet, but not too much, and it has some freshness from the blueberries and lemon. Another easy good idea for how to use biscuits. It's easy to make one or a bunch!
Give it a try! We are good at this!
