Can I Make "Bacon Lollipops"?

This fun Chef Club YouTube video was the perfect fit for "Something on a Stick" Day! Bacon lollipops are actually just bacon-wrapped meatballs that are stuffed with cheese inside! They are also supposed to have the shell of onion to help make a sphere lollipop shape, but there were no onions in the store. That impacted things as I will describe below, but spoiler alert: still tasted good! :)
What I used:
- Ground beef
- Bacon (1 piece per meatball vs. 2 in the video, I think?)
- Babybel (instead of little fresh mozzarella balls; didn't have any.)
- Skewers (they used popsicle sticks)
As I mentioned above, the bacon lollipops are bacon-wrapped meatballs that are stuffed with cheese inside. They use little balls of fresh mozzarella. I just used a Babybel and cut it into 4 pieces.
In the video, they make a meatball and stuff it with cheese. Then they use onion and encase the meatball with onions before wrapping them in bacon. So in the video, the bacon is actually wrapped around an onion-wrapped cheese-stuffed meatball.
I didn't have onions, so I just wrapped 1 piece of bacon around the meatball (which were ~1.5 oz). The ground meat was still kind of cold. I didn't defrost it in the microwave. It was in the freezer and then in the fridge until I cooked it.
I stuck skewers through them & tried to make sure I went through the cheese.
I baked it for about 30 min. at 350 degrees as in the video. The bacon wasn't as crispy as I wanted or as in the video. I think that was because the ground meat was still cold when I put them in the oven.
I upped it 400 degrees and backed them for about 10 more min.
RESULT: Success. :)
We are good at this. Not a full ! because the bacon wasn't as crispy as I wanted it to be and some of the cheese leaked out. I think this was because I didn't have onions.
I think the onions serves a few purposes here: (1) helps to make a sphere shape, (2) helps to keep the bacon separate from the meat and to help the bacon get crispier, (3) helps to keep the cheese from leaking out.
However, it was still a bacon lollipop and it still tasted good!
They are also just bacon, cheese and ground meat (+/- onions), so they are keto/low-carb.
It's pretty fun any day or it can be appetizer for a party. You could use a popsicle step or 1/2 skewer if you want.
