Can I Make an [Keto/Low-Carb] "Ultimate Cheeseburger" (Bacon-Wrapped Juicy Lucy)?

I saw this Chef Club YouTube video & a couple of the recipes looked tasty and fun. I tried out this bacon-wrapped cheese-stuffed cheeseburger, which is essentially a bacon-wrapped Juicy Lucy.
A Juicy Lucy is a cheeseburger with the cheese on the inside! They were invented in Minneapolis.
I tried to make a Juicy Lucy before using shredded cheese and failed. Haha! :) I think the size & shape of the cheese you use for a Juicy Lucy matters so that the cheese melts correctly. In this recipe, they use a Babybel little wheel of cheese & that's what I got.
Attempt #1:

Ingredients:
- Ground meat (this is chicken)
- 1 Babybel
- Bacon (4 pieces)
- Salt & pepper
In the video, they used ground beef. I felt like having ground chicken.
This is about 6-8 oz. of meat. I took half and made a patty. Then I put a little Babybel in the middle and covered it with another patty. Then I wrapped it with bacon. I forgot how they did it in the video when i was making it. I did 2 pieces one way and 2 pieces criss cross the other day.

I had a pan on the stove on medium-medium-high. I seared one side for about 5 minutes to get the bacon crispy. Then I flipped it.
RESULT: Success!
We are good at this! Yummy, ooey gooey cheesiness! I did it! I made a Juicy Lucy and this one was bacon-wrapped too. :)
When I took it off the stove, it wasn't as ooey gooey as I wanted. The meat was cooked through, but not completely melty. I just popped it in the microwave for 30 sec. That's a trick you can do too.

Also, this is just ground meat, cheese, and bacon & salt & pepper, so it's keto/low-carb.
