BBQ Chicken & Bleu Cheese Tacos

Here is a twist for Taco Tuesday! BBQ Chicken & Bleu Cheese! Sweetness from the BBQ sauce and funk from the bleu cheese! Yum!
Tip: If you make a bunch of tacos and don't finish them or want to meal prep, you can freeze them. To reheat, you can microwave 3 frozen tacos for about 2 minutes or 2 min. 30 seconds. Microwave times may vary, but you can microwave them right from when they are frozen; you don't need to defrost them. It may be more of an enchilada / nachos then -- eat with fork & spoon, but it still tastes good. :)
What I used (for 3 tacos):
- 3 oz. of Valley Fresh Chicken (shelf-stable; I didn't have fresh chicken; shredded Rotisserie or chicken breast etc. would work well here)
- 1 tablespoon of K.C. Masterpiece BBQ sauce (You can use favorite BBQ sauce or make your own)
- 1 oz. Bleu cheese crumbles
- 3 Old El Paso Taco shells
Steps / Instructions:
1.) Preheat oven to 400 degrees.
-- I think when you bake everything together for a few minutes -- for the taco shell to crisp up and the cheese to melt; it tastes really good! You can do this in a toaster oven too. :)
2.) Mix BBQ sauce with chicken.
-- You can add more if you like it to be saucy.
3.) Add BBQ chicken to taco shells and top with bleu cheese.
4.) Put in the oven for ~5 min. or until cheese is melted.
5.) Optional: Add additional bleu cheese crumbles on top for a different texture of bleu cheese.
6.) Eat! :)
