Asian Noodle Salad #1 / Rotisserie Chicken Day

This is a new summer fave because it's light and fresh, but you can make it whenever. It's also an easy way to meal prep; you can make a big bowl and eat it over a few days.
This version uses Rotisserie Chicken and it's Rotisserie Chicken Day!

What I used:
- Angel Hair protein plus (1/2 box)
- BirdsEye Frozen spinach (1/3 or 1/2 of the 10 oz. bag)
- Rotisserie Chicken (shredded), 1/2 cup of more
- Sesame oil (2 tablespoons
- Fig or Balsamic Glaze (3 tablespoons)
- Balsamic Vinagrette (1/3 cup)
You get the noodles going on in a boiling pot with salted water. While the noodles are cooking. I used Angel Hair, but you can use any noodles you like. I think long thing noodles work best because they pick up the sauce / dressing better. You can use clear glass noodles or try pancit noodlees.
Microwave the spinach. You do not need to pat it dry in this recipe.
In a mixing or serving bowl, add the sesame oil, viangrette, and fig balsamic glaze.
Then you add the chicken and mix it all together.
That's it! Give it a try! We are good at this!
(By the way, I used faux living wall art for the background of the photo. It made the noodles really pop.)
