5-min. Keto/Low-Carb Cheesy Pesto Tomato Shrimp

This is a really quick easy high protein meal! It has about 24 grams of protein if you use 4 oz. of shrimp and 1 oz. of mozzarella.

I used frozen shrimp here. You can use fresh obviously!

What I used:

- 4 oz. of shrimp

- Pesto (~1 teaspoon)

- Marinara sauce (~3 tablespoons)

- Fresh mozzarella (~1 tablespoon)

- Cooking spray

- Salt & pepper to taste

1.) After thawing them, I sauted the shrimp on medium-high for ~2 min. on each side.

2.) While the shrimp were on the stove, I sprayed the plate I was going to use with cooking spray.

-- This helps keep the cheese from sticking to the plate.

3.) I poured the marinara sauce, a little pesto and I put little chunks of mozzarella on the plate.

4.) I microwaved the plate for ~1 min. until the cheese was melt-y, but not burnt.

5.) Once the shrimp were done, I added them on top with a little salt & pepper to taste.

That's it! Give it a try! We are good at this!

The splatter from the microwave even looks artistic. Haha! :)
