4-Ingredient, 3 minute Spinach Artichoke Dip/Spread
Updated: Oct 29, 2019

Here is a quick and easy artichoke dip/spread that I came up with, in which I used some of my other tips from other posts.
Ingredients:
- Frozen spinach
- Artichokes (from the salad bar)
- 1 string cheese
- 1 1/2 tablespoons of sour cream
- I like a dollop of Daisy. :)

I wrote this in Steps/Instructions format at the bottom of the post.
I microwaved the frozen spinach for 1 to 1 1/2 minutes and then pat it dry with paper towels. I would cook the spinach on a separate plate or bowl like I did, so the dip/spread doesn't get too watery. I cut the artichokes into smaller pieces and tore the string cheese into smaller pieces (~2 in. x 1/2 in. long; you don't have to be exact).
I mixed the artichokes, string cheese, and sour cream in a bowl and microwaved for 45 seconds. You may have to experiment with the cook time. You want the string cheese to melt, but not to burn/become crusty.
I added in the spinach and mixed it all together. I added some salt & pepper to taste and a splash of lemon juice because I like lemon juice. I had some roasted garlic around (which I will write about it in another post; it's super easy and seems fancy), which I added also. I ate it with this Stonefire Artisan pizza crust I like. When I cut it into smaller pieces, it is like a breadstick or pita. You just throw it in the oven for a 5-6 minutes and it's ready to eat.
This whole pretty big bowl of spinach artichoke dip only has ~150 calories too; not bad. :)
Give it a try! We are good at this!
Steps/Instructions:
1.) Microwave the frozen spinach for 1 to 1 1/2 minutes and then pat it dry with paper towels.
- Cook the spinach on a separate plate or bowl from the rest of the mixture so the dip/spread doesn't get too watery.
2.) Cut the artichokes into smaller pieces and tear the string cheese into smaller pieces (~2 in. x 1/2 in. long; you don't have to be exact).
3.) Mix the artichokes, string cheese, and sour cream in a bowl and microwave for ~45 seconds.
- You may have to experiment with the cook time. You want the string cheese to melt, but not to burn/become crusty.
4.) Add in spinach and mix it all together. Add salt and pepper to taste (optional).
5.) Eat! Serve with crackers, chips, or bread.
