3-ingredient Cake Mix Cookies
I wouldn't call myself a big dessert person, but it seems like the recipes I want to try are sweets or desserts. Baking is pretty cool because you can use essentially the same ingredients: flour, sugar, eggs and oil and make lots of different things.

Anyways, I saw this video on YouTube from Tasty and had to try it! They make cake mix cookies in 9 different ways.
The cookies all have the same base ingredients: cake mix, oil and eggs. Then, there are different mix-ins depending on the cookie.
In the video, the cookies are shown in the following order.
- Chocolate Chip
- Strawberry 'n' Cream
- Snickerdoodle
- S'mores
- Birthday Cake
- Lemon Crinkle
- Peanut Butter Cup
- Red Velvet White Chocolate
- Cookies 'n' Cream
In the video, they use a whole cake mix box to make 12 cookies.
This recipe is cheap! Cake mix is usually $1.49 or a few dollars -- for 12 cookies (~$0.12 per cookie).
For 12 cookies, the base recipe is:
- 1 cake mix box
- Vegetable oil (1/2 cup)
- 2 eggs
Cook in 350 degree oven for 10-12 minutes.

I decided to make the Lemon Crinkle cookie. I didn't want to make 12 cookies, so I did some calculations to decrease the recipe, which may be helpful for you too. :)
One box is about 3 1/2 cups of cake mix.
To make 1 cookie, it requires ~0.292 cups of cake mix, 2 teaspoons of oil, and 1/6 egg. One-sixth of an egg is hard to measure. :)
The box also says that 1/10 of a box has ~160 calories, so 1 cookie (1/12 box) has about 133 calories plus a little bit more for oil and eggs.
I tried 1 cup of cake mix with a little bit more than 1/2 egg and a tiny bit more than 2 tablespoons of oil based on my calculations. This resulted in 5 cookies.
I baked them for 12 minutes at 350 degrees.
RESULT: Pretty much a success! :)
We are good at this! How good does this look?
They were good! They are a cake-y type cookie (not a surprise because they are from cake mix). The remind me of the cookies at the grocery store, Schnuck's, from growing up. This batch was maybe a tiny bit dry. I will try to add a little bit more oil on the next batch. I bought the ingredients to make chocolate chip cookies too. :)
